Chablis wines are made from chardonnay grapes grown in northeastern France and they are legendary for their spunky minerality. The word Chablis is derived from two Celtic words: “cab” which means house and “leya” which means near the woods. Clearly, a house near the woods in Chablis has been in demand for some time as researchers have even uncovered traces of a Neolithic village in the area.
